Meet our Head Chef Michael Lawson

Michael has been the Head Chef here at the Atlantic for the past 4 years.

Michael’s culinary journey began in Bearsden at The Partners Bistro, where he started as a kitchen porter. It didn’t take long for him to fall in love with the craft, and within a month, he knew that being a chef was his true calling. This passion for the kitchen has only grown stronger as his career has progressed, and today, he leads a talented team of chefs.

When asked about his signature dish, Michael doesn’t hesitate to mention the classic beef bourguignon he serves here. It’s a dish that embodies the essence of French cuisine: rich, comforting, and full of deep, developed flavours.

One of the biggest highlights of Michael’s career came recently, when Atlantic Bar and Brasserie was featured in Glasgow on a Plate, a book showcasing recipes and dishes from 20 of the city’s best restaurants. Being part of such a prestigious project was a moment of recognition for Michael and his team, marking a major milestone in his career.
